3 cup Basmati rice
1/2 cup green peas
6-8 small brinjals (egg plant), chopped, soaked in water + pinch of salt
2 medium sized potatoes, chopped, soaked in water + pinch of salt
4 tsp Goda masala
2 tsp turmeric
1 tsp asafoetida
6 green chilies, sliced
5-6 curry leaves
1″ cube jaggery
20 whole cashew nuts, roasted
8 tbsp Ghee/oil
5 cup water

Fish Fry...
For marinade
1 inch ginger
3 gloves garlic
1 tbp tamarind extract/ lime juice
1 tsp red chili powder/ cayenne pepper
1/2 tsp turmeric
1/2 tsp salt if fish
300 gms fresh fish
For breading
1/2 cup fine chickpea flour and/or semolina
1/2 tsp turmeric
1 tsp red chili powder
1/2 tsp salt
2 tbsp oil
Grind ginger, garlic into a paste.
Add turmeric, chili powder and salt to the paste. Keep aside.

For 20x20cm form/20 pieces:
2 liter milk
1 tbsp lime/lemon juice / citric acid
250 gm sugar
chopped pistachio nuts
1 tsp butter/oil/ghee
Cheese cloth
Boil 1 liter milk
Add, drop by drop, lemon/lime juice to milk. Stop when milk shows signs of curdling. Do not add excessive amounts of lime/lemon juice as it may add a bit of sour taste.
